Basil vinaigrette

You’re just one step away from creating this herby dressing. It would be perfect on grilled fish, chicken or meat as well as tomato or new potato salads – ideal for the summer months.
For something a bit different, we also have a poppy seed vinaigrette, to drizzle over salad leaves.
Ingredients
- 6 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- 15g basil leaves, torn
- 1 small garlic clove
- 1 shallot, finely chopped
- Pinch of sugar
Method
- Put all the ingredients into a small food processor and whizz until smooth.
