Banana oat flapjacks

This banana flapjack recipe is packed with oats to keep you fuller for longer and makes an easy low calorie treat.
- Makes 20 squares
- Hands-on time 10 min, oven time 25 min
Ingredients
- 50g flaked almonds, toasted
- 150g rolled oats
- 90g self-raising flour
- 50g dried apricots, chopped
- 70g soft brown sugar
- 125g low-fat spread, melted
- 3tbsp golden syrup
- 2 medium-ripe bananas, mashed
- 2tsp vanilla extract
- 1 egg
Method
- Preheat the oven to 180°C/fan 160°C/gas 4. Grease and line a 16 x 24cm or 20cm square tin with baking paper.
- Put all the dry ingredients into a mixing bowl. Stir in the spread, syrup, bananas, vanilla extract and egg, mix well and spoon into the prepared tin. Smooth the surface and bake for 20–25 min until lightly golden and firm to the touch. Cool for 10 min, then cut into 20 squares and leave in the tin until completely cool.
