Baked camembert with harissa honey

Who doesn’t love baked camembert? Here oozy, gooey cheese is drizzled with a fiery, sweet honey. This speedy recipe is perfect for entertaining – it’s so easy – but will wow your guests as they scoop it all up.
You can make the honey, score the cheese and add the garlic a day in advance – then all that’s left to do is put the cheese in the oven for 10 minutes before serving. Simple!

Before you start
You can make a bigger batch of the harissa honey as it lasts in the fridge for up to 3 weeks. Use it on anything that would benefit from some sweet heat.
Ingredients
- 2 tbsp clear or runny honey
- 1 tsp harissa paste
- 1 x 250g camembert
- 1 garlic clove, finely sliced
- Crackers, crusty bread and/or crudités (sticks of celery, carrot, cucumber…) to serve
Method
- Heat the oven to 190°C/ 170°C fan/gas 5. Mix the honey and harissa in a small pan over a low heat (see Scale It Up). Remove the wax paper from the cheese, then put it back in its wooden box. Score a few lines into the top of the camembert and slot in the garlic slices.
- Bake the camembert (without its lid on) for 10-12 minutes until gooey and bubbling. Drizzle with the harissa honey, then serve immediately with bread, crackers or crudités for dipping.
