Avocado with poppy seed dressing

Serve this healthy snack recipe with our carrot and mango crush for a real vitamin boost.

Ingredients
- 1 ripe avocado
- 4 crackers or crispy bread pieces
For the dressing
- 2 tbsp sunflower oil
- 2 tsp balsamic vinegar
- 1/2 tsp runny honey
- 1 tsp toasted poppy seeds.
Method
- Whisk the dressing ingredients together and season to taste.
- Halve, stone and peel the avocado, then cut into wedges. Arrange on top of the crackers or crispy bread and drizzle over the dressing. Keep any leftover dressing in a jar in the fridge.
