Apple and ginger yogurt dessert

If you reach for yogurt after a meal, try adding grated apple and crushed biscuits for something a bit special. This healthy recipe is ideal as a snack or a light dessert.
- Serves 2
- Ready in 10 min
Ingredients
- 50g ginger biscuits (about 5)
- 1 Golden Delicious apple
- 1 tbsp lemon juice
- 1/2 tsp caster sugar
- 150ml natural yogurt
Method
- Place the biscuits in a plastic food bag and bash with a rolling pin to crush. Divide two-thirds between 2 glasses or tumblers and set aside.
- Grate the apple into a bowl and stir in the lemon juice to prevent it from discolouring. Sprinkle with the sugar then divide between the glasses.
- Top with the yogurt and sprinkle with the remaining ginger biscuit crumbs. Serve immediately, or cover and chill for up to 2 hours. Decorate with Apple crisps (see recipe).
