Ajo blanco

Also known as white gazpacho, this southern Spanish chilled soup combines sweet grapes, creamy almonds and bread to create a silky, refreshing bowlful when you need to cool off from the heat.

Ingredients
- 200g green grapes, roughly chopped, plus a handful to garnish
- 1 garlic clove, roughly chopped
- 200g blanched almonds, roughly chopped
- 50g crustless white bread, torn into pieces
- 1 tsp sherry vinegar
- 100ml extra-virgin olive oil, plus extra to drizzle
Method
- Put all the ingredients apart from the oil in a blender with 350ml water and whizz until smooth. Turn the speed to low and, with the motor still running, slowly drizzle in the olive oil until the mixture emulsifies. Season with salt, then cover and chill overnight in the fridge.
- Slice the handful of grapes for the garnish. Divide the soup among bowls, top with the sliced grapes, a drizzle of oil and a grind of black pepper.

This is delicious!! I always have leftover grapes and am bored of muffins etc.
This is equally perfect with red grapes – i used a good sourdough bread which made it even more tasty .. thank you Delicious, more leftovers no longer left over !!!!!
