Air fryer sausage and pepper stew

If you’ve never made sausages in the air fryer, we implore you to try it! They become perfectly browned (like school dinner sausages) but retain moisture in the middle. This easy air fryer sausage recipe is our favourite thing to do with them. It takes flavour inspiration from Spain in the form of peppers, paprika, white wine and fennel seeds. It also saves on washing up as it’s all done in the one dish, and is near effortless to create!

Ingredients
- 2 onions, cut into wedges
- 2 red or yellow peppers, sliced
- 100g cherry tomatoes
- 3 tbsp olive oil
- 6 sausages
- 1 tsp fennel seeds
- 1½ tsp smoked paprika
- 100ml white wine

Method
- Heat the air fryer to 200°C and remove the grill rack if it has one. Put the onions, peppers and tomatoes in the air fryer, drizzle with the oil and season with salt and pepper, then cook for 10 minutes.
- Add the sausages, fennel seeds and paprika, stir well, then cook for 10 more minutes.
- Turn the sausages, pour in the wine then turn the heat down to 180°C. Cook for a final 8 minutes until the vegetables are tender and the sausages are browned all over.
