10-minute strawberry ice cream sandwich

Whizz up instant, two-ingredient strawberry ice cream and serve between two squidgy cookies for a quick and easy ice cream sandwich.
If you’ve got a little more time, serve these with our best chocolate chip cookies (swap the choc chips for white chocolate, if you like).
Ingredients
- 150g frozen strawberries (shopbought or your frozen glut)
- 2 tbsp condensed milk
- 2 squidgy cookies
- Crushed freeze-dried and/or fresh strawberries (optional)
Method
- Whizz the frozen strawberries in a small processor/blender until finely chopped. Add the condensed milk and whizz again, scraping down the sides several times, until thick and smooth.
- Quickly sandwich your instant ice cream between the squidgy cookies. Serve immediately or freeze for 30 minutes for a firmer sandwich, adding crushed freeze-dried and/or fresh strawberries if you like.
