Who says entertaining midweek has to be stressful? Create an impressive three course Thai feast in around an hour. As ever, the more you can prep in advance, the better.
Quick nibble with drinks
Mix large shavings of fresh coconut with a pinch of chilli flakes. Scatter over a lined baking sheet and toast in the oven for about 5 minutes until golden. Toss with sea salt while still warm and serve with pre-dinner drinks.
Starters orders
Then for a starter, go for these budget fish cakes. You can make them with minced pork instead of fish – just mix all the ingredients together in a bowl, rather than a food processor.
Noodles for a main
The main event is a classic (but easy) pad Thai – while it looks like it’s got a lot of ingredients, the method is simple, and the dish comes together quickly.

Then, these mango fools take just five minutes to prepare. Make them in advance, and leave to chill.
