Kaffir lime leaf
The West has the bay leaf, India has the curry leaf and South East Asia has the kaffir lime leaf. It is often used to add a citrusy flavour – most famously in Thai cooking. The fresh leaves of the knobbly kaffir lime have an hourglass shape, and in the UK they are easiest to buy dried in jars.
Try using them in curries, soups or stir-frys for their aromatic, zingy flavour.
