Jerusalem artichoke

The Jerusalem artichoke (in season between November and February) is pinkish in colour and looks like a large lump of root ginger. Strangely though, it isn’t a member of the artichoke family.

It’s actually a type of sunflower and has nothing to do with Jerusalem. Its name derives from the Italian for sunflower, ‘girasole’, which may have been corrupted to Jerusalem.

Cook in the same ways you would a potato, or use raw in salads.
