WHAT THEY DO
When he opened Campsie Glen Smokehouse for business in May 2015, Owner Duncan Smith, who had worked in the smoked seafood industry for 20 years, was aiming to offer something different. Two years in the planning, the smokehouse focuses on the curing and drying process to produce a range of seafood charcuterie.
Campsie Glen has created three cures inspired by the region. The fish is cured for a minimum of six days to develop each distinctive flavour and texture. Based north of Glasgow by the foot of the Campsie Fells, the Island Cure is prepared with sea salt from the Isle of Anglesey and seaweed from the Hebridean Isle of Lewis.
Atlantic halibut is responsibly sourced from Scottish suppliers and after curing is hung to remove moisture then smoked over a specially selected blend of kiln-dried wood chips. The charcuterie is then carved by hand. The future will see further cure ranges from the small family business, each reflecting the local area.

Campsie Glen Smokehouse was praised for their product’s “excellent texture”, use of hand carving, and inclusion of Hebridean seaweed.
