It’s interesting to hear Marco discussing the controversy around, what he believes, is a discrepancy in the awarding of Michelin stars. He also questions whether he was actually responsible for the 80s ‘rock-n-roll movement’ in the kitchen, as so many people believe.
According to Marco, the secret of cooking is allowing Mother Nature to get involved. The more you do to a dish, the more he believes you take away from it. People are too inclined to refine and amend food, rather than keeping things simple…
