Chocolate budino

Have you tried budino before? With only five ingredients, this creamy Italian chocolate pudding is incredibly simple but beautifully smooth and indulgent. It’s a great dinner party dessert, as it can be made ahead.

Before you start
This is a great dessert to make in advance as it will keep in the fridge for up to 3 days. Just grate over the chocolate to serve.
Ingredients
- 750ml whole milk
- 150g unsalted butter
- 150g caster sugar
- 60g cornflour (check it’s gluten free if it needs to be)
- 150g dark chocolate (70% cocoa solids), chopped, plus extra, finely grated, to serve
Method
- Bring the milk to a simmer in a small pan, then remove from the heat just before it starts to boil. At the same time, add the sugar and butter in another pan over a low-medium heat. Once the butter has melted and and the sugar has dissolved, remove from the heat and stir in the cornflour, whisking well to ensure there are no lumps.
- Off the heat, gradually add the milk to the butter mixture, whisking all the time, until it’s all combined and smooth. Return to a low heat and gently bring back to the boil, stirring all the time. This will take several minutes, so be patient.
- Once it’s about to boil, add the chopped chocolate and whisk in until melted and almalgamated. Divide between 4 glasses or serving bowls. Chill for at least 4 hours. Grate over a little more dark chocolate before serving.
