Chocolate and marzipan croissants

Fill leftover croissants with chocolate, marzipan and amaretti for a decadent breakfast that’s the perfect way to kick off Easter Sunday or Christmas Day. (Psst! This would be a great recipe with which to wake up your mum on Mother’s Day, too.)
Day-old croissants work best in this recipe, as they’re easier to cut and crisp up well in the oven.

- Hands-on time 10 min, oven time 8 min
Ingredients
- 4 croissants
- 100g good quality marzipan, grated
- 5g unsalted butter
- 30g amaretti biscuits, plus extra to serve
- 50g dark chocolate, chopped
- Melted chocolate to serve
Method
- Heat the oven to 180°C/160°C fan/gas 4. Slice open the croissants without cutting through to the other side.
- Put the marzipan, butter and amaretti biscuits in a food processor and whizz to just combine.
- Divide the mixture among the croissant cavities, then top with the chopped dark chocolate.
- Put in a baking tray and bake for 8 minutes or until the chocolate melts and the marzipan softens.
- Drizzle with melted chocolate and crumble over another amaretti biscuit, if you like.
