Stir-fried romaine lettuce with sesame

Stir-frying lettuce – like you would cabbage – is something we should all be doing more of. It’s super-quick and gives a good balance of crunchy and juicy leaves. Here the romaine is coated in a triple-hit of sesame – tahini, seeds and oil – for a rich, nutty contrast.

Ingredients

  • 2 tbsp tahini
  • Juice 1 lemon
  • 2 tsp sesame oil
  • 2 tsp light soy sauce
  • 1 tbsp sesame seeds
  • 1 tbsp vegetable oil
  • 2 banana shallots, finely sliced into rounds
  • 20g ginger, finely grated
  • 2 heads romaine lettuce, cut into 5cm chunks

Method

  1. Mix together the tahini, lemon juice, sesame oil and soy sauce until smooth.
  2. Briefly toast the sesame seeds in a large frying pan over a medium heat, then tip onto a plate. Put the pan back over the heat, add the oil to the pan and,once hot, add the shallots and ginger. Stir-fry for 3-5 minutes until softened and golden. Increase the heat to high and add the romaine. Stir-fry for about 4 minutes or until the white parts of the lettuce are just tender and the green parts are wilted and bright.
  3. Pile onto a serving plate, then drizzle with the tahini dressing and scatter over the sesame seeds.
