Ingredients

  • 1 small romaine lettuce
  • 3 tbsp homemade or good-quality mayonnaise
  • 3 tbsp tomato ketchup
  • ½ tsp Worcestershire sauce
  • ½ tsp sriracha
  • 1 lemon, cut into wedges or slices
  • 2 pinches smoked paprika
  • 1 large avocado
  • 12 large cooked prawns
  • ¼ bunch dill

Method

  1. Trim the root from the lettuce. Separate the leaves into a large bowl of iced water to crisp up.
  2. Make a marie rose sauce by mixing the mayo, ketchup, Worcestershire sauce and sriracha in a bowl. Squeeze in a little lemon juice from a lemon slice and season with a pinch each of smoked paprika, salt and pepper. Put in a dipping bowl and sprinkle with another pinch of smoked paprika.
  3. Peel and stone the avocado, then slice. Arrange on a platter with the sauce, patted-dry lettuce leaves, prawns, lemon slices and dill.
