Prawn cocktail platter

What’s better than classic prawn cocktail? A prawn cocktail platter for sharing! This recipe has stood the test of time for a reason – but the sauce can be a strangely sweet, claggy affair. Here, a proper marie rose dip made with homemade mayonnaise, quality prawns and crisp lettuce for dipping make the ultimate al fresco dish.

Ingredients
- 1 small romaine lettuce
- 3 tbsp homemade or good-quality mayonnaise
- 3 tbsp tomato ketchup
- ½ tsp Worcestershire sauce
- ½ tsp sriracha
- 1 lemon, cut into wedges or slices
- 2 pinches smoked paprika
- 1 large avocado
- 12 large cooked prawns
- ¼ bunch dill
Method
- Trim the root from the lettuce. Separate the leaves into a large bowl of iced water to crisp up.
- Make a marie rose sauce by mixing the mayo, ketchup, Worcestershire sauce and sriracha in a bowl. Squeeze in a little lemon juice from a lemon slice and season with a pinch each of smoked paprika, salt and pepper. Put in a dipping bowl and sprinkle with another pinch of smoked paprika.
- Peel and stone the avocado, then slice. Arrange on a platter with the sauce, patted-dry lettuce leaves, prawns, lemon slices and dill.
