Ingredients

  • 250g unsalted butter, plus extra to grease
  • 100g light brown soft sugar
  • 200g good quality honey
  • 450g rolled oats

Method

  1. Heat the oven to 160ºC fan/gas 4. Grease and line the tin with butter and baking paper.
  2. Melt the butter in a large pan over a low-medium heat then add the sugar and honey. Once fully melted, remove the pan from the heat and stir in the oats. Pour the mixture into the tin, then smooth the surface with the back of your spoon.
  3. Bake for 22-25 minutes until set at the edges but still a little soft in the middle. Leave to cool completely in the tin. Cut into squares or bars, then store in an airtight container for up to 1 week.
