Santa’s spritz punch

A cranberry-spiked spritz makes for a crowdpleasing batch cocktail. This spritz gets a festive glow up thanks to a beautifully flavoured ice ring studded with garnishes, which gently release into the punch as the party progresses.

Ingredients
- 1 orange, sliced
- 80g pomegranate seeds
- 3 cinnamon sticks
- 3 rosemary sprigs
- 750ml prosecco
- 300ml Aperol
- 200ml cranberry juice
- 250ml soda water
Method
- Take a cake tin or bowl that’s slightly smaller than the diameter of your punch bowl and put a small heatproof glass in the centre. Tastefully arrange the sliced orange, pomegranate seeds, cinnamon sticks and rosemary sprigs in the ring, then pour in enough boiling water to cover (see Know-how). Leave to cool, then put in the freezer.
- Once frozen solid, run the frozen tin/bowl under warm water until the ice detaches, then carefully lower into the punch bowl. Pour over the prosecco, Aperol, cranberry juice and soda water in the quantities listed (or more/less but to the same ratio, depending on the size of your bowl).

Scale it up To make more, keep the ratios of the ingredients the same. Make it less boozy by adding more soda.
Using boiling water helps infuse the ice with the garnish flavours and ensures a clear (not cloudy) ice ring.
