Ingredients

  • 3 granny smith apples
  • 1 tbsp demerara sugar, plus extra to sprinkle
  • ½ tsp ground cinnamon
  • 25g unsalted butter
  • 320g sheet puff pastry
  • 1 medium free-range egg, beaten
  • Caramel sauce to serve (optional)

Method

  1. Core and chop 2 of the apples into 1cm chunks and put in a saucepan with the sugar, cinnamon and a splash of water. Cover and cook over a medium heat for about 15 minutes, then crush lightly with a wooden spoon.
  2. Core and chop the remaining apple into small cubes (around 5mm) and stir them into the cooked apple mixture along with the butter. Cook for 5 minutes, uncovered and stirring regularly. Leave to cool.
  3. Unroll the pastry, cut it in half lengthways and then widthways to create 4 rectangles. Spoon a quarter of the apple mixture onto the bottom half of each rectangle, leaving a 1cm border.
  4. Brush the exposed pastry edges with the beaten egg, then fold over the pastry to encase the filling. Use a fork to crimp the edges and seal together, brush the tops with more egg and sprinkle with more sugar.
  5. Turn the air fryer to 200°C. Cook the turnovers directly in the basket for 10 minutes (work in batches if all 4 don’t fit in a single layer). Once the top is golden, flip them over and cook for another 5 minutes. Serve with caramel sauce (if you like).

delicious. tips

  1. This recipe works really nicely with pears too.

  2. Chill the pastry parcels at the end of step 4 for up to a day, then cook when ready. You can also freeze them at this stage – first on a tray, then transfer to a freezer bag. Air-fry from frozen; just add another 5 minutes or so to the overall cooking time.
