Italian-style chopped salad

The brilliant thing about this Italian-style chopped salad is you can use whatever you fancy – cheeses, nuts, celery, cucumber or radishes – just aim for crunch.
- Serves 6-8 as a side
- Hands-on time 15 min
Ingredients
- 1 romaine lettuce, sliced
- 1 radicchio or 2 red chicory, sliced
- 200g marinated or chargrilled artichoke hearts, quartered
- 10 green pickled chillies, such as peperoncini or guindilla, sliced
- 100g firm salami or saucisson, chopped into chunks
- 40g picante gorgonzola cheese
For the dressing
- 3 tbsp red wine vinegar
- 1 tbsp lemon juice
- 5 tbsp light olive oil
- 1 garlic clove, crushed
- 2 tsp Dijon mustard
- 1 tbsp clear honey
Method
- Pour the dressing ingredients into a glass jar with a tight-fitting lid. Add 1/2 tsp each of sea salt and freshly ground black pepper. Shake well.
- Put all the other salad ingredients in a large bowl. Just before serving, pour over the dressing, then toss everything well.
