Guinness soda bread

The Dairy founder Robin Gill’s recipe for Guinness soda bread is great for those who are new to bread-making. It doesn’t require yeast so there’s no kneading or proving involved and it only takes 10 minutes to prepare before baking.
In his own words: ”This is one of the easiest and most satisfying bread recipes. I bake it every St Patrick’s Day and serve it with smoked salmon on the day, then on the following days with jam and butter or a bowl of soup.”.
- Makes 1 loaf
- Hands-on time 10 min, oven time 55-60 min
Ingredients
- 250g plain flour
- 200g wholemeal flour
- 15g bicarbonate of soda
- 1 tsp salt
- 150g jumbo oats
- 1 tbsp clear honey
- 1 tbsp black treacle
- 250ml Guinness
- 250ml buttermilk (see tip)
You’ll also need…
- 7cm x 23cm x 12cm (standard size) loaf tin lined with compostable baking paper
Method
- Heat the oven to 220°C/200°C fan/gas 7. Mix together all the dry ingredients in a large mixing bowl, then make a well in the centre. Add the remaining ingredients to the well, then work the mixture with your hands to make a loose, smooth and wet dough.
- Put the dough in the prepared tin. Bake for 15 minutes, then turn down the oven to 190°C/170°C fan/gas 5 and bake for a further 35-40 minutes. Remove the bread from the tin, then bake directly on the oven rack for 5 minutes more or until the loaf sounds hollow when tapped on the bottom. Remove from the oven and cool on a wire rack. Serve sliced with salted butter.

If you can’t find buttermilk, mix 225ml whole or semi-skimmed milk with 25ml fresh lemon juice, then set aside to thicken for 5 minutes

Made this using wholemeal spelt flour and was really pleased with the result. It has a great flavour with a little bit of sweetness so would probably be good with cheese. Really tasty toasted too.
I sometimes take the bread out of the tin with 5 mins to go, switch off the oven and let it sit on the rack in the oven for an hour or so.. just let’s it cook through perfectly 👍 Also… a can of Guinness and a BOTTLE of Guinness are quite different. The bottles has bubbles, a can/draught does not. Makes a difference when making this bread but still tastes lovely either way!
I made this Guinness soda bread at the start of the first lockdown and I haven’t stopped. It is so easy to make and so delicious.
I have substituted the Guinness with a golden ale and I use 250g of whole meal flour and 200g of plain flour.
