Quick lemon and ginger fool

Satisfy your sweet tooth the quickest way possible with a delightfully simple lemon and ginger fool. Just throw a handful of ingredients together, sit back and relax.

Ingredients
- 3 tbsp mascarpone
- 100ml double cream
- 1 tbsp stem ginger syrup
- 3 ginger biscuits
- 1-2 tbsp lemon curd
Method
- Whisk 3 tbsp mascarpone, 100ml double cream and 1 tbsp stem ginger syrup until just thickened and spoonable.
- Roughly break up 3 ginger biscuits and divide most of the crumbs between 2 short tumblers.
- Spoon over the mascarpone/cream mixture, then top each with 1-2 tbsp lemon curd. Sprinkle with the remaining ginger biscuit crumbs and serve.
