Sticky beef stir-fry

Quick to cook and full of zingy far-eastern flavours, this is the perfect meal if you’re short on time.

Ingredients
- 150g tenderstem broccoli
- 2 tbsp groundnut oil
- 2 x 300g sirloin steaks, sliced
- 1 banana shallot, sliced
- 3cm fresh ginger, cut into thin sticks
- 1 garlic clove, sliced
- 1 red chilli, sliced
- 1 red pepper, sliced
- 100g mangetout
- 1 tbsp toasted sesame oil
- 1 tbsp clear honey
- 2 tsp soy sauce
- Good squeeze of lime juice
- Handful of fresh coriander leaves
Method
- Blanch the broccoli in boiling water for a couple of minutes, then drain and refresh under cold water.
- In a wok or frying pan, heat half the groundnut oil over a high heat, then fry the steak until just done. Remove from the pan and set aside.
- Heat the remaining oil and fry the shallot, ginger, garlic and chilli for 2-3 minutes. Add the broccoli, pepper and mangetout and cook for 1-2 minutes. Return the steaks to the pan with the sesame oil, honey, soy sauce and lime juice. Toss together, scatter with coriander, then serve.
