Beef nachos

Nachos are the perfect dish for a casual supper with friends. These beef nachos are flavoursome, quick to make and are bound to impress guests. Try making them in an air fryer too.
- Serves 6
- Takes no longer than 20 minutes
Ingredients
- 1-2 tsp chilli flakes
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tbsp vegetable oil
- 500g beef mince
- 2 tbsp tomato purée
- 2 garlic cloves
- 300ml water
- 200g tinned black beans
- ½ lime
- 1 bunch fresh coriander
- Monterey Jack cheese
- Chopped avocado to serve
Method
- In a dry pan, toast the chilli flakes, coriander and cumin for 1 minute. Remove.
- Heat the vegetable oil in the pan and brown the beef mince.
- Stir in the tomato purée, garlic and the toasted spices, then cook for 2 minutes. Pour over the water and simmer for 10 minutes.
- Add the black beans, drained and rinsed, and cook for 5 minutes. Add the lime juice and coriander leaves. Spoon over tortilla chips, top with the cheese, then grill until melted. Serve with chopped avocado and more cheese.

How do I make nachos in an air fryer?
Instead of grilling in step 4, build the nachos in lined air fryer basket (or in a heatproof dish) in the air fryer and cook for 5 mins at 180C.
