Spiced larb

This is a perfect light lunch or canapé. Serve in little gem leaves and let everyone help themselves.
- Serves 6
- Ready in about 30 minutes
Ingredients
- 1 bunch of fresh coriander
- 1 red chilli, deseeded
- 2 garlic cloves
- 3 shallots
- 1 tbsp oil
- 500g beef mince, seasoned
- 300ml beef stock, hot
- 2 tbsp brown sugar
- Fish sauce
- 2 lime
- 2 little gem lettuces
- Spring onion, shredded
Method
- Pulse the coriander, chilli, garlic and shallots in a food processor until chopped to a paste.
- Heat oil in a pan over a medium heat, add the beef mince and fry for 10 minutes until well browned, breaking up the mince with a wooden spoon.
- Add the stock and simmer for 10 minutes. Stir through the coriander paste and brown sugar, then fry for 3 minutes more. Add a splash of fish sauce and the juice of 1 lime and stir.
- Spoon into the leaves of the little gem lettuces and top with the spring onion. Serve with lime wedges.
