Warm spiced rum chai

A warming drink to beat the winter chill, Georgina Hayden’s rum spiced chai is made with whole milk, spices and dark spiced rum.

Ingredients
- 8 green cardamom pods
- 2 cinnamon sticks
- 2 star anise
- 1 tsp black peppercorns
- 6 cloves
- 6 breakfast tea bags
- 1 litre whole milk
- 5cm piece of fresh ginger, thinly sliced
- 6-8 tbsp honey
- 250ml dark spiced rum
Method
- Put the cardamom pods, cinnamon sticks, star anise, black peppercorns and cloves in a pestle and mortar and crush lightly. Put in a large saucepan with the tea bags, whole milk, 1 litre water and a ginger.
- Bring to the boil, then reduce the heat to low and simmer for 15 minutes. Strain through a sieve, then stir in the honey to taste and the dark spiced rum. Keep warm on a low heat and serve when you’re ready.
