What to do with leftover matzo meal
Matzo meal is made by finely grinding matzo crackers (an unleavened cracker-like bread that is traditionally eaten around the Jewish holiday of Passover) into a breadcrumb-like consistency. It is made simply from flour and water, and creates a light, crust-of-a-good-bread flavour, which can be used in a multitude of ways.

Ways to use up leftover matzo meal
- Cheesecake base
Substitute some of the crushed biscuits in a cheesecake with matzo meal. Try one of our 40 cheesecake recipes and replace half the digestive biscuits in the base with matzo meal. - Spring onion fritters
Slice 75g spring onions, then fry for a few minutes to soften. Mix in a bowl with 3 beaten eggs, 100g matzo meal and plenty of salt and pepper. Shape into fritters, then shallow-fry in vegetable oil until golden. You can also substitute some of the caking agent in other fritter recipes with matzo meal. In a bowl, mix 2 x 170g tins salmon, a few capers, a 450g pack ready-made mashed potato and some seasoning. Shape into 8 patties, then roll in matzo meal to coat. Shallow fry in vegetable oil until golden. - You can also replace a portion of the breadcrumbs for matzo meal in our stuffing and fishcake recipes for similar results.
