Mexican breakfast tortillas with avocado

Add some Mexican flavour to your morning with this breakfast recipe; tortillas topped with scrambled eggs, avocado, chilli, spring onions and tomatoes.

- Ready to eat in 15 minutes
Ingredients
- 4 flour tortillas
- 25g butter
- 1 deseeded, finely sliced red chilli
- 2 sliced spring onions
- 2 deseeded, chopped tomatoes
- 6 free-range eggs
- 2 sliced avocados
- Chopped fresh coriander
- Lime wedges, to serve
Method
- Heat the tortillas in a hot pan until golden, then remove. Melt the butter in the pan, then add the chilli, spring onions and chopped tomatoes.
- In a bowl, whisk the eggs, season, then add to the pan, stirring until the eggs are just cooked. Divide among the tortillas and serve with the avocados, chopped fresh coriander and lime wedges.
