Superfood in Minutes is Donal Skehan’s 9th cookbook to hit bookshelves. If you’ve yet to give his new book a go, Donal describes it as a fun kitchen tool as it challenges you to cook veg in exciting ways. When you see the title “Superfoods” on the cover, you might be quick to assume that Donal is talking about chia seeds or coconut oil but no, for him, the term superfoods simply means using as much veg as possible in cooking.
Now that he lives across the pond (Donal lives in the USA with his wife and son Noah), meal planning is absolutely essential in order to achieve that decent work-life balance we all crave so badly. Discover the meal planning philosophy Donal swears by, which includes a fail-safe guide to batch-cooking, food shopping and planning ahead for what he calls the “couch slouch”.
What’s more, Donal discusses the life-affirming moment when he discovered how to properly cook with tofu. Due to an ongoing love/hate relationship with this mighty meat-free ingredient, Donal spent a considerable amount of time trying to “nail tofu” and believes that in doing so, some of the recipes within his new book have benefited greatly as a result.
