Hot dogs with spiced onions

Meltingly soft spiced onions add a bit of a kick to this simple hot dog recipe. You could serve at a kids party.
- Serves 6
- Takes 5 minutes to make, 50-55 minutes to cook
Ingredients
- 2 tbsp vegetable oil
- 6 organic hot dog sausages (we like Helen Browning’s Organic Hotdogs, from Tesco and Sainsbury’s)
- 6 white hot dog buns
- Mustard or ketchup to serve
For the onions
- 2 tbsp sunflower oil
- Knob of butter
- 2 onions, finely sliced
- 2 garlic cloves, crushed
- 2 tsp yellow mustard seeds
Method
- To make the onions, heat the sunflower oil and butter in a sauté pan or deep frying pan and fry the onions gently for 5 minutes. Sprinkle with salt and continue to cook with the lid on for a further 10-15 minutes until very soft. Add the garlic and cook for a further 1-2 minutes.
- Add the mustard seeds and a splash of water. Stir well, then cover the pan and cook gently for 30 minutes until the onions are soft, golden and rich.
- Heat the vegetable oil in a frying pan, add the hot dogs and cook until golden brown and cooked through. Serve in the hot dog buns with the onions (use tongs to remove them from their juices) and a good squeeze of mustard or ketchup.

For onions with even more pizzazz, add 2 tbsp tomato purée, 1 tsp cayenne pepper, 1 tsp soft light brown sugar and 1 tsp English mustard with the mustard seeds in step 2 and continue the recipe. You won’t need the mustard or ketchup to serve.
