Former MasterChef winner Dhruv Baker’s spiced spinach recipe would make a great side dish to a curry feast.
Ingredients
- 400g baby spinach
- 25g unsalted butter
- 1 tbsp fenugreek leaves or seeds, pounded in a pestle and mortar
Method
- Put the spinach in a hot pan with 1 tbsp water. Heat until wilted, then drain away the excess liquid. Add the butter along with the fenugreek, then season to taste. Toss to heat through, then serve with Dhruv’s spiced chicken ballotines and glazed carrots, if you like.
