How to use up leftover quinoa
- Toasted salad topping
Soak a generous handful of quinoa in a small bowl of cold water for 5 minutes, then drain. Set a small frying pan over a medium heat, then add the quinoa and stir briefly until any excess water has evaporated. Add a drizzle of oil, then stir to coat the quinoa. Cook for 10-12 minutes, stirring occasionally, until the quinoa is golden and starts to pop. Transfer to a plate to cool over or toss into salads for added crunch. - Fishcake coating
Toast quinoa as above, then use to coat fishcakes instead of breadcrumbs (find recipes at deliciousmagazine.co.uk). Bake or fry until crisp and lightly browned.
