How to use up leftover capers
- Anchovy, chilli and caper pizza
Spread a pizza base with tomato passata, crushed garlic, torn mozzarella and a few chopped anchovy fillets. Scatter over capers and chilli flakes, then bake at 220°C/200°C fan/gas 7 for 15-20 min until the base is golden and the cheese has melted. - Zingy green beans
Coarsely chop a few tablespoons of capers, then mix with lemon juice, oil, salt and pepper. Stir into steamed green beans and garnish with lemon zest for a quick, summery side dish. - Roasted cauli salad
Toss cauliflower florets with oil, salt and pepper, then roast for 25-30 min at 220°C/200°C fan/gas 7 until tender and golden. Meanwhile, whisk 3 parts olive oil with 1 part sherry vinegar and 1 part clear honey. While the roasted cauliflower is still warm, toss it in the dressing to coat, then mix with pine nuts, capers, raisins and fresh parsley.
