How to use up leftover frozen spinach
- Pasta sauce
Add a few balls of frozen spinach to tomato pasta sauce when it’s nearly finished cooking. Allow the spinach to thaw in the sauce until heated through. - Spinach pesto
Thaw 200g or so of spinach then squeeze out the excess water. Whizz to a paste in a food processor with a crushed garlic clove, the zest and juice of a lemon, a handful of pine nuts and some grated parmesan. With the motor still running, drizzle in 50ml olive oil to combine. Season to taste.
