How to use up leftover light coconut milk
- Coconut porridge
Instead of using ordinary milk in porridge, use light coconut milk. Cook on the hob over a low heat to prevent the coconut milk from splitting. - Rice pudding
Swap the regular milk for light coconut milk (or use a mixture of both) when making rice pudding. Serve topped with caramelised banana slices. - Pannacotta
Use light coconut milk instead of double cream in pannacotta recipes. Heat the milk gently (don’t let it boil) to prevent it from splitting.
