Puy lentil, red onion and feta salad

So tasty, pretty healthy and super quick to make, this salad makes a brilliant mouthful when paired with some lamb.
Ingredients
- 400g Puy lentils, rinsed
- 1 red onion, thinly sliced
- 200g feta, crumbled
For the dressing
- Juice of 1 small lemon
- 4-5 tbsp olive oil
- 1 tbsp red wine vinegar
- Small bunch of fresh parsley,
- leaves roughly chopped
Method
- Place the lentils in a large saucepan with 1.2 litres unsalted water. Bring to the boil and simmer for 20 minutes or until just tender but still retaining some bite, and drain.
- Mix all the dressing ingredients together and season with sea salt and freshly ground pepper. Add the dressing to the lentils along with the sliced onion and crumbled feta, and pile into a bowl to serve.
