Mint sauce for lamb

Serve your roast lamb with an easy, and quick, mint sauce. This recipe is ready in minutes and freshly-made is much better than the shop-bought stuff.

- Serves 6
- Takes 10 minutes to make, plus infusing
Ingredients
- A bunch of fresh mint
- 2 tsp caster sugar
- 2 tbsp red wine vinegar
Method
- Pick and finely chop the leaves of a bunch of fresh mint. Place in a small bowl and stir in the caster sugar.
- Pour over 75ml boiling water, stir to dissolve the sugar, then add the red wine vinegar. Leave to cool and infuse.

delicious. tips
Try adding finely chopped red chilli for a hint of spice, or 1 tbsp redcurrant jelly instead of the sugar.
