What to do with leftover Swiss chard
This spring vegetable works wonders in pastas, quiches and much, much more.

How to use leftover Swiss chard
- Sautéed chard with parmesan. Cook swiss chard with 1 crushed garlic clove, a splash of water and a glug of extra-virgin olive oil. Season, then squeeze over the juice of half a lemon. Toss through plenty of shaved parmesan, then serve.
- Potato salad. Boil 500g new potatoes until tender. Drain well, then toss with 1 tbsp soured cream, a dash of olive oil and some chopped spring onions and gherkins. Season well.
- Chard mash. Fry pancetta cubes in a dry frying pan until crisp. Thinly slice the chard stalks and roughly shred the leaves. Put the stalks in a heatproof bowl and cover with boiling water for 1-2 minutes, then drain. Put the leaves in a colander and pour over boiling water to wilt. Cool, squeeze dry, then add to the pan with the stalks and pancetta. Cook for 1 minute, then mix into mashed potato.
