How to use leftover rosemary
- Herby fried eggs. Melt butter in a frying pan. Add the leaves of a couple of fresh rosemary sprigs and, when the butter is foaming, crack in eggs and fry until cooked to your liking.
- Fragrant tea. Bruise fresh rosemary sprigs by rubbing them between the palms of your hands, then add to a teapot or cup of freshly boiled hot water and leave to infuse for a few minutes before drinking.
- The best roasties. Toss a few fresh rosemary sprigs and whole un-peeled garlic cloves in a roasting tin with large roughed-up chunks of parboiled potatoes. Season well, drizzle with olive oil and roast in a hot oven for about 45 minutes or until the potatoes are crisp and golden.
