How to use up leftover brazil nuts
- Wild rice salad with toasted brazil nuts
Roast brazil nuts with rosemary in the oven at 200°C/fan180°C/gas 6 for 10minutes. Combine cooked wild rice with a handful of dried cranberries, 1tsp honey and 2 tbsp balsamic vinegar. Chop the nuts and the rosemary, then mix with the rice. Drizzle with olive oil and serve with chicken or pork. - Chocolate brazil nut butter
Whizz brazil nuts in a blender until finely chopped, then mix into your favourite chocolate spread along with a pinch of sea salt. It will take the spread to another level. Enjoy on toast or with vanilla ice cream.
