Caipirinha cocktail

Caipirinha is a light and refreshing Brazilian cocktail made with rum and fresh lime. Serve it as a welcome drink at your next BBQ.
- Serves 1
- 5 minutes
Ingredients
- ½ large lime
- 50ml cachaça or any white rum
- 20ml sugar syrup (see tip)
Method
- Using a spoon, squash the lime, cut into wedges, in a tumbler, releasing the juice and zest oil with the back of a spoon.
- Pour in the cachaça or rum and sugar syrup, then add ice cubes or crushed ice and stir well.

You can make your own sugar syrup in advance by warming up equal amounts of white sugar and water (ie 200g sugar and 200ml water) and stirring until the sugar has dissolved, then allow to cool. It will keep in the fridge for up to a month.
