Avocado and cheese quesadillas

Try a taste of Mexico with this luscious snack; the ultimate comfort food.
Ingredients
- 4 soft flour tortillas
- 4 tbsps refried beans
- 1 avocado, sliced
- 2 handfuls rocket leaves
- 2 handfuls grated (vegetarian) Cheddar
- 1 tsp olive oil
Method
- Spread the tortillas with refried beans, slices of avocado, and sprinkle over rocket leaves and grated Cheddar. Top each with another soft flour tortilla.
- Heat the olive oil in a frying pan and fry 1 at a time until crisp on both sides, then cut into quarters and serve.
